Location :Jinping Village in Zhenghe County, Fujian Province, (福建政和锦屏村)

 Jin Ping is located deep in the Jiufeng Mountains, with an altitude of more than 800 meters. The area is surrounded by mountains and mist. A clear stream runs from west to east through the village. The water is so clear that you can see the bottom of the stream, and fish sometimes swim by. Most of the old houses in the village are built against the mountain, with black tiles and white walls, and occasionally a few ancient trees dotted in between, which is quite ancient.  

  Jinping has a mild climate with four distinct seasons. It is foggy in spring, cool in summer, crisp in autumn, and occasionally snowy in winter. The annual average temperature is around 16 degrees Celsius, with abundant rainfall, up to 1,800 mm per year. This climate is most suitable for the growth of tea trees. The soil in the mountains is mostly red-yellow soil, rich in organic matter, and the soil layer is deep and loose, allowing the roots of tea trees to stretch freely and absorb nutrients.

Variety: Zhenghe Dabaicha

Among the varieties of Zhenghe white tea, Zhenghe Dabaicha is the most respected. This tea tree is a small tree, large-leafed, late-maturing species. It has an upright posture, sparse branches, oval leaves, dark green, thick and soft leaves. The buds and leaves are fat and hairy, and the weight of one bud, three leaves and 100 buds can reach 123 grams. This variety is highly cold-resistant and suitable for making white tea. The silver needles made are fat and hairy, and the taste is fresh.

Features:

The production of Zhenghe white tea requires "the right time, right place, and right people". Choose a sunny day, spread the fresh leaves thinly on a bamboo sieve, and place them in a ventilated place to wither naturally. When the leaves are soft, the leaf edges are slightly curled, the green smell is reduced, and the fragrance is revealed, move them to low light and dry them. The whole process is not stir-fried or kneaded, and it is all left to nature. Therefore, white tea retains the true taste of tea leaves to the greatest extent.
